Professions and Mob Drops

Say if I were to take up Skinning and Leatherworking, are the Mob's have a tendency to drop items associated with that profession or does it just depend on what you kill? Thanks

If you have skinning you can skin most/all (not sure which) animals by using a skinning knife.
People without the profession cant do it as all so in essence it does affect drops but not by percentage the way you were thinking.

On another thought then. Even if you dont take it up as a profession you could still reap some of the benefits on the low end of the totum poll but on the other hand I guess all the stuff you would get would be crap. Oh well.
