I have a 70 Holy Priest, and I am completely sick of healing. Now it is time for me to do some damage. Since I know nothing about Warriors. I was wondering if someone with a bit of experience could help me figure out the best build for a "kick !@#$%^&*" Warrior. Keeping in mind that I mainly want to focus on damage and threat, but mainly damage.

the ONLY way arms warriors are able to out-dps fury is with a shammy WF totem, otherwise fury is better.

If you want a challenge while leveling up level Protection.
I do this sort of thing for fun all the time, level up characters in the spec. that is the "hardest".
I am currently in the process of leveling a protection warrior. Admittedly it IS slightly slower than, say, arms or fury but it results in a fun and rewarding experience. (You even get Concussion Blow and Shield Slam which are two awesome attacks). Protection warriors have great survivability, leveling them is not a problem.

Fury!
its very good for ppl who use 2 1h weps and fury is very good in PvP
Arms!
Arms i very good in PvE and you'll crit much and often in arms.
Protection!
In protection you'll have very much hp but you will not hurt much.
protection is good in instances as tank
Warrior PvE

Ok... arms does NOT in any way crit more than fury. Even with poleaxe spec +5% crit chance fury crits more.
Fury: best dps of all warrior specs.... but also the weakest at mitigating damage.
Arms: great pvp spec with its mortal strike debuff and improved overpower. I find that improved slam with a 2 handed weapon really does some nice things for my damage (70 arms warrior is my main).
Protection: best at reducing damage taken, lowest damage potential. Tanking can be fun in higher dungeons and raids, but I found tanking while leveling to be rediculously slow. Best thing I can say about prot. is that you don't really die much.
So basically:
Go Fury if you are going to fight monsters and DPS (damage per second) in dungeons. I personally LOVE fury... so many numbers flying around.
Go Arms if you want a good balance of damage and survivability (or if you hate rogues... improved overpower talent pretty much decimates most rogues). The real kicker with Arms in PvP is the 'burst damage', meaning a huge amount of damage inflicted very quickly, but then resulting in a short break before the next attack (depending on how much rage you have). This quick, high damage can surprise your opponent and give you a chance to lower their health dramatically. This spec is the one I most recommend for PvP since 2.3, but Fury can be quite fun here as well.
Go Protection if YOU want to get healed for a change Mr. Priest. The feeling of having elites beat on you sends cloth toons running for the hills, but you will soon learn that with a shield and Protection talents, you can stick around for quite a while. Also, Protection is not completely lost in PvP... Arathi Basin Protection warriors make great defenders of flags as well as flag carriers in Warsong Gulch. Not as good as Restoration Druids IMO, but still quite good. Of course, Alterac Valley could always use a boss tank as well.
Keep in mind that the warrior is VERY gear-dependent, and you may find yourself saying something quite obscene (quite loudly) sometimes. It takes a great amount of skill to beat another warrior who is better-geared than you, but the important thing to remember is that once you start getting some of the gladiator's equipment or raid gear, you will see a fast improvement in both PvP and PvE.
