When you put a buff on yourself is that something that's held on the client side or on the server side?

Im 99.9% sure its server side. Seeings how when you cast a buff on someone other than yourself it has to go through the server to the other person, then the buff also effects dmg, resists, mitigation etc.. or whatever the buff is for which has to be calculated when you are in battle so it would have to be server side.

I thought that almost all interactive variables in the game were server side, even your character stats etc

everything that is physicaly feasible to be serverside, is serverside. The things that can't be done serverside, are still calculated serverside, and the two values are compared and rectified at regular intervals. Hell, even your macros are serverside. Every time you zone, you are sent all your relevant info: your spellbook, recipie book, quest journal, macros, inventory contents, bank contents, etc etc etc.
