Preamble
Well, I made a lot of mistakes in my version 2.0 guide. I got a bunch of sellback prices wrong, and I missed one of the best recipes in the 20s. Plus, that one only went to 80. I'm now 80 and looking both back at the mistakes I've made and forward to the next 19 (yes, 19...read on) levels. I have a bit more personal experience, more commentary, more content to add.
INTRO
Welcome to the first synth of the rest of your life! Clothcraft is a wonderful profession that goes well with woodworking, smithing, and leathercraft. If you want to make your own mage armor, this is the craft for you.
Before we start, meet your peers and mentors; head to Windurst and check out the guild. It's in Windurst Woods, at G-12. Here'll you'll meet:

Across the street at G-11, you'll find the Windurst Clothcraft Guild Shop. Its business hours are 6-21h 7 days a week; it's closed on Firesday. Inside, you'll find Meriri and Kuzah Hpirohpon ready to sell you various threads, cloths, raw materials, and finished clothcraft items.
Some general information: Clothcraft is based around the manufacture and use of several types of cloth. The easiest cloth to work with is Grass cloth, followed by Cotton, Linen, Wool, Silk, Rainbow, and finally Cashmere cloth. There is also Velvet which is a blended material that fits between wool and silk, and various cloths which are only found from certain difficult monsters.
In order to make any cloth, you need 3 threads of that cloth type and an earth crystal. So, for example, 3 cotton threads in an earth crystal will, with any luck, become a cotton cloth. Now you may be asking: how do I get threads? Well, besides purchasing threads from your local guild shop, you can also refine them from pairs of naturally occurring raw materials using a lightning crystal: 2 moko grass for a grass thread, 2 saruta cotton for cotton thread, 2 flax flower for linen thread, and so on.
I've broken this guide down into several stages to make it easier to read and follow, as well as to group the leveling path by common themes.
Now, onto the guide!

Clothcraft is pretty smooth sailing from 0-4. Your plan of action should be to make and save as many grass cloths as you can. If you have capital to burn and don't feel like leaving town, just start buying Yagudo Bead Necklaces and use wind crystals on them to produce 3 or more grass threads; this recipe will cap at 1. If you harvest, use lightning crystals on pairs of the plentiful moko grass; this recipe will cap at 3. Once you have grass thread, use earth crystals to weave them into cloths. You're going to need a lot of grass cloth, so go nuts.
If you're low level and just starting out, I suggest you farm for your materials around Windurst. This will provide you with ample income with which to fund your clothcrafting aspirations. If you are high level, farm where you get the best return on your time invested and then purchase your materials.
Once you get to about level 4 in cloth, you're going to want to become familiar with the guild in Selbina. I suggest considering bringing along a fishing rod (glass or carbon work very well here) because the guild is only open 6-21, and is closed all day on firesday. When you're waiting in Selbina, you can fish with Lugworms which are fortunately sold in town.
Clothcraft enters its first "suckage" period at level 4. Because cotton cloth and cotton threads are readily available at the guild and saruta cotton is always in short supply, turning saruta cotton into cotton thread is generally a losing proposition. However, you're in luck because grass cloth and threads in Selbina are generally very cheap -- on the order of 40g per thread and 130g per cloth.
Thus, I suggest parking yourself in Selbina and making a bunch of capes to sell to vendor. The recipe caps at 8 so if you're at 4 the failure rate without advanced support shouldn't be too horrific. The capes can be sold back to vendor for about 80g, depending on your fame, so you're going to lose some money here. You can make this up by bringing back stacks of cotton thread, which sell as low as 2500g for a stack from the guild, and selling them for a significant mark-up (3600+ per stack) in any of the starting towns.
Once you reach 8, capes will no longer give you skill. You can move on to Hachimakis, which require the somewhat more expensive wind crystals, or you can buy a few stacks of cotton thread turn it into stacks of cotton cloth, which sell for 7000 or more in Windurst.
In any case, after a bit of early sweating, you will make it to level 10. You will need to, at some point after level 8, turn in a single cape to Ponono at the guild in Windurst to advance beyond this point and onto Stage II.

Once you're level 10 (and certainly no earlier than level 9) you can move onto making linen. Flax flowers will go as low as 187 per flower at the guild; this price is often reached on Earthsday in Selbina. When it does go down this low, I suggest buying as many stacks as your gobbiebag will hold and hoofing it over to Windurst for some Advanced Synthesis support. Note that from now on, you will almost always want advanced support.
Take the flax flower you have and process it all into linen thread. Yes, all of it. You will want to go 9 whole levels on this recipe, so you will probably need 20 stacks of flax flower or so. You will fail often at 10, but don't fret, because each stack of flax flowers will yield 2 linen cloth when fully processed without failure. Each cloth sells for about 3k on the auction house, so you'll be getting 6k for a stack of flax flowers which you (hopefully) spent less than 2500g on. So, you can suffer a few failures and still walk away a much richer person for this stage. Don't forget to turn in a Cotton Cape to Ponono to become an initiate.
Once you reach 19, process the threads you made into linen cloth. This should take you to 22. Unfortunately, you're now in another crafting dead-zone. The next "good" recipe is a bit too far away to make reliably, so you're going to have to spend a little bit of your linen profit to step over this gap.
Fly Lures are cheap and easy but cap at 30 so the break rate is kind of steep at 22. Also, don't forget they require at least 4 bonecraft to make. They sell slowly to fishermen for less-than-cost, however, and for less than 200g to vendor, so you're going to lose a bunch of money this way.
Alternatively, you can try Kaginawa, which sells well to ninjas in Jeuno. Be careful, though, manticore hairs are expensive to break. Each synth makes 1/3 of a stack.
In order to bridge the gap, you can make Moblinweave and Fishermen's Hose until 23, and some Heko Obis. Once you're closer to 30 you can also make Fishermen's Tunicas to go with the hose. Between those and the fly lures you can supply all your friends with all the fishing gear they need for fishing levels 10-20.
When you hit 28, turn in a Heko Obi to become a Novice and move onto the next stage.

Now that you're a Novice you can start taking advantage of the Guild quests to build Guild Points. However, keep in mind that you will only be able to redeem your points for crystals until you are skill 48. Also, GP are fairly expensive for what you get: you'll spend probably 100-200k for your 50,000 GP item; you can get a whole lot more permanent skill points for that kind of money by investing it into your skill-up sessions.
This stage is short and profitable. Wool Thread is made from Sheep Wool just like Linen Thread is made from Flax Flowers. Wool Cloth sells for about 6k each (or about 60k stacked). So you can produce 10-12k of Wool Cloth per stack of Sheep Wool. Fortunately, sheep wool is also fairly plentiful at the Auction House for 6-8k per stack. You can also almost always get it from the Clothcraft Guild Shop for 675 per piece. With this in mind, never pay more than 8100 per stack at the AH. When you sell your Cloths, sell them individually in Jeuno and stacked in Jeuno or San d�Oria.
Also, if you're into farming your materials, I suggest instead of farming sheep wool you start farming wind clusters and crystals; you're going to need a ton of these very soon. Tahrongi and La Theine are good places to look for easy elementals. Also, if you're higher level, you can find elementals frequently in the bottom of Maze of Shakhrami.
Once you hit 37, move on to Stage IV.
STAGE IV: Fletching Mania

Here you will become the woodworker's best friend. You will be able to make some of the more difficult fletching that are required for Scorpion and Horn arrows, which are used for leveling 39-59. You'll do well if you bazaar your fletching overnight outside the Woodworking Guild in San d'Oria for a decent price.
Bird Feathers are sold at the Clothcraft Guild. Unfortunately, they're also often sold out, since they can go for as much as 1k per stack at the AH and cost much less at the guild. You can farm and steal these off of any of the Bird types -- akbabas, vultures, et cetera -- or buy them anywhere. Avoid the Windurst AH for the best prices. You know those wind crystals I told you to start hording? You're going to need a lot of them. Get cracking.
Don't forget to turn in a Feather Collar upon hitting level 38 to ascend to the rank of Apprentice.
Around mid-40s you can start doing alternate recipes to approach 50. First, you can begin making silk thread from crawler cocoons. 2 cocoons and a lightning crystal turn into a thread, much like wool and linen and grass. You can get the crawler cocoons from various crawlers, or from harvesting. They are also sold in the Windurst Clothcraft Guild Shop, usually at a fairly low price. When these are available for less than 250g each I suggest just spending all day crafting them. You will need all the silk you can get in the very near future.
You can also start making Velvet Cloth. This is primarily useful for the Gobbiebag #3 quest in Jeuno. Using the Cotton Thread version of this recipe you can make a decent profit, and also save money for you and your friends when doing the gobbiebag quests. Stacks of Velvet Cloth are also snagged by higher-level clothcrafters who need this material in substantial quantity for leveling.
At 48, Ponono is going to ask for Wool Bracers. This item is going to cost you a fair amount to make. When you turn this in you will become a Journeyman. I'll also note that at level 50, the rate of your skillups will decrease by 50%. Crafting for skill from here on out is a much more challenging endeavor. You've come a long way, though, so grit your teeth and push through.
STAGE V: The Silk Road

Welcome to the Silk Road! For the next 20 skill levels, you will make items primarily from silk. Silk costs anywhere from 8-10k per stack at the AH, and you're going to need a ton of it. Farm it. Make it from crawler cocoons. Beg for it from friends. Mortgage your house for it. You'll be going through somewhere around 70 stacks of silk cloth; at 40k per stack at auction that's almost 3 million if you just buy it straight up. But don't worry, you won't lose that much because sell-back prices are somewhat reasonable.
Your first task is to make Silk Cloth until you're 53. Do NOT stop short on this recipe: take it all the way to 53. You are going to be making so much silk after 53 anyway you might as well squeeze every last tenth out of this recipe. Once you're 53 you might as well make a few more stacks of cloth for good measure.
Once you're 53, you can start cutting the cloth into Green Ribbons. I recommend doing this on Windsday to start, as a 9 level gap is pretty hefty. You will lose about 40% of your silk cloth until level 55. Fortunately, you can sell your Green Ribbons to a vendor in a town where you have max fame for 2075 (with low fame they sell for just under 2000, which is a significant margin when you think of how many ribbons you're going to be selling).
When you get close to 60, you can also throw in the occasional Field Hose to break up the monotony. These should sell for a wee bit of profit. However, be careful, because they don't sell too fast, so you can accidentally flood the market and lose all your profit. Plus, a single failure can be very costly, as this combine is about 11k of raw materials.
At 58, turn in a Red Cape to Ponono. You can usually buy Red Capes for much less than manufacturing cost in Jeuno. Once you're done that, back to the Green Ribbons!
At 62, and not a point sooner, start making Silk Headbands. These are just like Green Ribbons except they use a cheaper crystal and add a fairly expensive Carbon Fiber. You can buy Carbon Fibers cheaply in Bastok, usually, because they are a leveling synth for alchemists between 40 and 45. If you have the alchemy skill, consider making them for yourself by buying Bomb Ash directly from Olaf in the Metalworks. Any way you cut it, you'll be spending at least 675 per Carbon Fiber. Sell the headbands to the vendor in a city where you have max fame. They should sell for about 2400g, so they aren't as nice as Green Ribbons, but they will take you to 69 if you choose to take this synth all the way.
Once you're in the mid-60s you can make some Field Tunicas for slight profit and the chance at a skill-up. These can be extremely expensive to fail, however, so be careful!
I recommend that you stop making Silk Headbands at 66, because there is a better synth coming up.
At 68, give yourself a big pat on the back and give Ponono a Wool Doublet to celebrate your ascension to Artisan.
STAGE VI: Is that a Rainbow?

After a gruelling 17 levels and somewhere around 500 Silk Cloths, you're finally done the Silk Road. You'll notice that a lot of your competition will have dropped out, as many people give up during this very trying stretch. You're past it! You've succeeded! Now for some bigger and better challenges!
First, you'll want to take your skill to 72 on Battle Bracers. This recipe is a pain in the arse to make, but you are well rewarded for your effort: the result sells for up to 4300g to vendors. If you make your own cotton threads and velvet, you'll actually break even or make a slight profit on this recipe! Don't forget to uncap at 68, and take this recipe all the way to 72.
Once you're at 72, you can start making Rainbow Thread from Spider Webs. Don't worry about a 6-level gap; with advanced synthesis support you shouldn't endure a break rate above 10%. This recipe has a significant investment required; spider webs can cost 5-10k each. Happily, the result of this recipe, Rainbow Threads, sells quickly and for a slight profit.
Personally, I took Rainbow from 72-78, making about 14 stacks of the stuff in the process. This is an investment of almost 3 million gil. If you don't have the capital to do this, you might consider alternatives. First, Jester's Cape. This sells for 3300g or so to the vendor, and the +1 version is desired by Bards if you are lucky enough to get one. However, this requires a subskill of 20 leathercraft; don't try it before you cap out on Dhalmel Leather (21). Second, Green Berets; these sell to vendor for 3100g or so, and has no subskill requirement.
In the end, I highly recommend Rainbow Thread because the recipe is easy to form and despite slight breakage, you should come out ahead. If you don't have the capital, I highly recommend you get the capital because the near future will be VERY expensive. Furthermore, you can save a few stacks of Rainbow Thread for the next step...
Once you're at 78 with rainbow threads, you can convert threads to cloth. Once again, this recipe has an extreme investment required -- 50k+ per synth on my server -- but the result sells quite nicely at a profit. You will need approximately 60 synths (5 stacks!) to gain these 2 levels, which could be a capital investment of 3 million or more.
Note that when I did the rainbow thread recipes on my server, they LOOKED like a loss. However, the supply of rainbow thread and cloth was so fragile on my server that I was able to push the stack price of cloth up 130k to make up for the rising price of source materials, and the buyers were happy to pay my price because, quite simply, I had bought out all the rainbow materials so they had no other choice. Rainbow is typically a source material for extremely expensive crafts where they don't care about an extra 5-10k on the synth cost.
Give Ponono a Silk Cloak at 78 for permission to go on to bigger and better synths.
STAGE VII: You're going to arhate this part, errant ya? (groan that was bad)

Disclaimer: my CC skill is currently 80. Take the following with a grain of salt and please always check for yourself before dumping a truckload of money into something.
Well, the gravy train is over. No more making stuff for skill at profit, break-even, and slight loss. Get ready, because you're probably going to spend at least 100k per level from here on out. I warned you that you'd need the capital, didn't I?
First, I should mention that there are a lot of fun "upgrade" recipes in the 80s: wulong shoes, master's gi/sitibaki, devotee mitts, hailstorm stuff, bishop's robe... Don't forget to stop and have some fun from time to time trying these! They're also not much worse than Arhat's Hakama, financially, as most will lose you 3-10k per normal-quality synth. You can't go wrong for having a bit of fun, signing your own upgrade gear, and getting some skill off of it!
If you're looking to grind out skill, though, your best bet is Arhat's Hakama. This thing is annoying as hell to make; it's like Battle Bracers except worse, and you still lose money if you do all your own subcombines. It sells for 4400g or so to NPC, which on my server is about a 3500g loss, making the cloths myself. Considering 30 combines per level, that's over 100k. Ouch.
Also, remember, that failures don't give you any skill at 6 or more levels from the cap. So, until level 83, breakages are just a pure waste of money. For that reason, I recommend obtaining the skill-increasing GP items. See my treatise on Guild Points at the end of the guide. If no +1, then consider Jester's Headbands: they sell for 2200g or so to NPC so are lossy as the Hakama, but will get you one level closer.
Ponono will ransom access to the 90s for one of your Arhat's Hakama. Break the cap, and cheer because that is the last cap you will need to break.
Assuming you make it to 88 with your sanity, you should probably put it in a safe place. It's about to get worse. A lot worse. Errant Slops use rainbow thread and sell to NPC for a measly 3800g or so. I've seen the high level clothcrafters desynthing the slops, perhaps in a vain attempt to recoup the rainbow thread. I'm not sure what else you can get from the slops, but if rainbow thread is common, it may be the best thing to do with them. Fortunately, this piece of gear also sells on the AH for about 20k each, so recoup some of your losses by selling some here.
STAGE VIII: The Penultimate Synth
94-98 Dance Shoes

Well, you've almost made it. Just another few million and you can land yourself at 98. Not much to say here, except goodbye gil. These shoes sell occasionally and for a decent price on the Jeuno AH. However, you're going to be making over 100 of these, so unless you want to be auctioning these until sometime next century, you'll want to toss these. I'm not sure how well they sell to vendor, or what they desynth to, if they desynth at all. It's these or stuff with multiple Raxa, though...
On the plus side, at level 98, slap Ponono for making you take all those silly guild tests. Go ahead. You've earned it.
STAGE IX: Well, now we're just screwed
As far as I know, there are only 3 recipes above 98 Clothcraft.

I'm actually kinda depressed that it's going to end like this. 99-100 looks pretty much impossible, even if I do complete Rasetsu Samue at 250k per synth, mostly pure loss. If you get this far PLEASE PLEASE PLEASE help us out and post here. I have lots of questions I'd like to ask!
GUILD POINTS
Once you give Ponono a Heko Obi to become a Novice, Huah Colphioh will finally talk to you. She will give you the opportunity to exchange certain goods for clothcraft-exclusive Guild Points. These points can then be redeemed for items and gear that cannot be obtained any other way:
# 70,000 points for Magnifying Spectacles, which give you +1 skill
# 100,000 points for a Weaver's Apron, which give you +1 skill
# 150,000 points for a Gilt Tapestery, which will give you Moghancement: Clothcraft
# 40,000 points for Cloth Purification, which will allow you to make Smooth Velvet and Fine Linen cloths
# 50,000 points for Cloth Ensorcellment, which is not used in any recipes yet.
If you are going to take clothcraft beyond 60, I recommend that you start collecting guild points as soon as you can. Focus on items which give you a good ratio of GP awarded to cost-to-make, or items which you can make with plentiful HQs and sell the HQ result to other players.
You will want at least +1 by level 80 and possibly +2.
