Scholar instances - zigzag road between 21st & Crossroads
Ore - Red Horn Lodes near Chittering Hole
Wood - Just north of the Nud-melek entrance in Zelem-Melek

The ore instance has anything from Khadzad-tin to iron and are just normal nodes so I'd imagine they have the same chance for a flake.

Re: 'Daily' crafting instances

The Stage-locks are in place only to govern the resources within the instances. Otherwise, these spaces behave just like instances such as Carn Dum or Urugarth (you can go in whenever you want, you just won't be able to get the rewards until your locks are up).

And yes, the monster load-outs for the spawns do have a chance to vary between isntance runs.

This is the intended design. The Quests are daily but the resources are only twice a week. This was done to limit the amount of new resources entering the game.

My recent Dev Diary explains the thought and development process behind these instances - I encourage you to read it if you have not yet done so.

bummer a daily instance that works only twice a week is not daily:(
