With all the roots and snares it's getting harder to PvP with a melee template, but melee does have some major advantages over ranged:
<<<Strengths:>>>
1) Armor Break: this should always be the melee players opening offensive attack. Even the basic version you get in the brawler tree will help you take down those ranged toons much faster because they will take more dmg causing them to a) heal more until they run out of mind or b) be incapped by damage.
2) Knockdown: Every elite melee template gets a KD, which only 2 ranged professions get. Knockdown helps get those ranged kiters into range so you can do some serious damage, or stop them from healing for a short time so a melee player can get the incap.
3) Center of Being: While ranged have to aquire 4xxx in BH to get an extra 250 points of melee/ranged defense, melee get this no matter what elite profession you choose. TKAs get an extra 500 points of defense at only x1xx in their skill tree, this advanced CoB will reduce damage by about 45%.

1) Attack Range: While rifleman can shoot up to 80m away melee toons have a measily 6m range. Range can be effectively done away with if the PvP enviroment allows you to run into a building or around the corners of a building.
2) Roots/ Snares/ Mezzes: IMO this is why melee is seen as somewhat weak after the CU. Currentky there is no defense against these specials which can make combat somewhat imbalanced. If a melee player were to fight a pistoleer/ MCM he or she would have a very tough time dealing with Stopping shot/ Paralyze/ Electrolyte Drain. Luckily, melee has the best defense in the game so you could, hopefully, eventually corner the ranged player an quickly incap him with your armor break and KD specials.

The best way to incap a ranged player is to do the following: keep armor break on him during the whole fight, using a combination of melee hit/ melee strike to conserve your action, you're going to need all of it. When the ranged player gets down to about 3/5 health used your second most powerful attack, then immediately knockdown. Even with a 2.8 speed hammer you should be able to hit them twice while they are down, this should incap most Mediocre PvPers if you have a decent dmg weapon.
Sometimes against those well prepared opponents ( those who use synsteak, those with duelist stance, etc.) they will stand up with a small amount of health an immediately heal, this is where conserving your action comes into play. Keep hitting them with yur your two most powerful attacks, most cannot heal fast enough if you hit them hard ebough.
<<<Other Tips:>>>
KD an opponent when thy have about 5 seconds left on duelist stance, this will break their macro causing them to lose defense.
Use your enviroment to your advantage. Run around the corner of building, into a cantina, behind a statue...make them come to you!
Try to use your power attacks after they KD you, this will mean they will have to heal and will have no way of stopping your onslaught for 30 seconds ( unless they packed their template full of mezzes.)

-Parawan Nutricake- allows you to catch up to those chain mezzers
-Pikatta Pie- adds 150% to your base defense ( if youe have 100 defense it will put you at 150)
-Synsteak- always good to have in emergencies ( gives around 45 mitigation bonus)
-Booster Blue- DO NOT USE ANY OTHER SPICE, this only reduces your health regen, +20% to all other stats.
-Breath of Heaven- +400 health, +200 regen to action, +50 regen to mind
I suggest testing out all these foods to find what works best for you, you only have so much room in your stomach!
