Freighters aren't particularly defensible things, but there is a way to be pretty much immortal in one. Pretty much an exploit, but... log off.
As long as you log off before you are engaged in that system, you'll live.
If you jump into a camped system, just log off before decloaking. Your ship will stay in space getting shot at for about 30seconds, and then vanish right in front of your attacker's eyes. This is of course assuming that they don't have enough firepower to take you down in 30 seconds (needs more than about 20 gank-setup battleships).
It doesn't matter if you are scrambled or whatever, as long as you logged before decloaking, you will disappear in about 30 seconds.
Obviously the same applies wherever you are if you log off before getting engaged. If a hostile warps in and you ctrl-Q before they first aggress, you're clear. It's of most use in gate camps though.
This is due to a couple of bugs in the log-out timer:
1) It resets at every jump
2) It can't be increased once the player has logged off.
