1. Most people would argue that mithra is probably the best due to high evasion, agi and dex.
2. Warriors only for most cases.
-Some would sub ranger if they wanted to be DDs... but it's very rare. Nin are usually invited as tankers.
Mnk = Extremely challenging until end game.

when you say Nin/Wht I am guessing you meen white mage as sub. if so I would say no along with everyone else in this fourm
not to be meen but your first job is to learn what jobs go with what.
type "/sea all nin 73-75" next time your on
if you want to do nin sub War
your gonna be a tank who holds hate off everyone else while they wack it and you do little damage
good luck

!!!!Side Note!!!!
All races can do all Jobs equally. In the long Run it all depends on the Player and the equipment they have.
I tried to give each race at least 2 specific jobs that most uses their traits. So if I gave a Job to one race the other didnt get it.

Couple choices on how you want to play NIN:
Tarutaru if you intend on playing as NIN/BLM
Galka/Hume/Elvaan if you intend on keeping hate
Mithra for higher Agility, which is the important modifier for the evasion+ items (not evasion skill+).
IMO, since most people play NIN/WAR, I'd go with the Galka as the best. They do decent damage. When their shadows are down, they don't die too quickly with their high VIT.. They don't suffer an AGI penalty unlike Elvaan.
If you have the gil to buy HQ staves, camp for Moldavite earring, buy Republic Circlet, other int+ and magic attack bonus+ gear, and lhave ots of gil to waste, you can go NIN/BLM. I saw a SS on the gamefaqs forum of where a lvl 60+ tarutaru NIN/BLM was doing over 180 DMG/spell. Rarely used in the EXP PT situation, but very potent if used correctly.
NIN/WAR is the staple blink tank. IMO most NINS sacrifice too much for evasion instead of damage+ and haste+ items. A lot of nab NINs do that and wonder why they can't keep hate. 99% of NINs use this
NIN/THF is a very potent farmer. You get the bonus of TH1 to help improve drop rates, you get mad Evasion because of the added Evasion Bonus job trait from thief. Not really used in the EXP PT situation.
NIN/WHM is decent at soloing HNM's for giving access to Stoneskin, Erase, and the -na spells. Not really used in the EXP PT situation.
People have commented on the power of the NIN/RNG, but I have yet seen it worth the gil output. What shurikens are you planning to use? If you wanna out damage the NIN/BLM, you won't be using the level 28 shurikens. The other shurikens are hardly crafted or very expensive for the damage it does. Moreover, sadly, you cannot barrage shurikens. Waste of gil lto be used in the EXP PT situation.
BTW. Excellent geared MNK of any race will always pull hate in any party because they outdamage everyone minus overnuking BLM. Most level 75's want to reroll as monk because they do massive damage, useful in gods (Boost+Chi blast spam), can self heal (Chakra), and were able to outpull anyone on NM pops (Chi blast).

It's a wrong perception that NIN cannot do dmg... Uber NIN's dmg can be on par with rng pre- rng nerf patch. That's during higher lvls tho... 60+++

All races can do all Jobs equally. In the long Run it all depends on the Player and the equipment they have.
I feel this is a common misconception. Would you rather have a Tarutaru BLM with the best armour or a Galka with the best armour? Because either way you look at it Tarutaru have better INT and MP, so for Galka to compensate for that they would still be behind a Tarutaru with the same armour..
And a long way behind.
Unfortunately player skill is not as important as gil at higher levels, for most jobs anyway. I am a Monk, and I believe it is a job that is classed on equipment, hence my camping of Yagudos in Castle Oz. Some jobs though, are sorted by skill. Others, are determined by how much you want to do the job i.e. Ninja. I can't count how many times I've seen a Ninja Hojo/Dokumori/Jubaki-less. I was even lucky enough to party with an Utsusemi-less Ninja at level 18 in the Dunes a few weeks back.
And at the end of all that, I agree with Mithra. Agi for dodging, Dex for critical hits (the real hate keeper) and are amazing at parrying if you keep your skill up.

i've never once had a good mithra tank in all my time of playing, the top tanks were taru paladin and galka nin.
and i've been playing quite a while even at higher levels, although with EXTREMELY expensive equipment an elvaan can do pretty well, but who cant when your gear is uber leet and you have a bard in your party.

the best tanks that i have EVER had in multiple partys have been taru tanks. they may have less HP but they compensate for it a lot with gear and food. ive had them playing whm, smn, blm, rdm, war, loldrg, mnk, nin(taru pld wanted to tank), sam, thf, and i think thats all of them. then again i am a taru so <.<

I can count the good ninja tanks I've had on one hand, because a lot of people do Ninja half-assed, especially just to 37.
My Ninja is 25 at the minute, and I've had all the elemental tools and status effect tools for most the time, and I seem to be one of the few who have done that. Last night, I had an awesome Ninja tank at level 46 though called Oburukori or something like that.
Elvaan are strong, Galka have good vitality, taru seem to do the job well because they concentrate more, hume are average everything but have a good provoke. But hate keeping comes mainly from critical hits for me, which I have a lot of as a Mithra, add that to my evasion and my parrying, I think I have the best job for it.
I think the best evidence for it is that I don't need to provoke provided I pull.
