Fury for Grinding.
Arms for PvP
Prot for endgame instances.
You should be able to tank as any of them til end game.
Fury can also be pretty good for PvP.

Fury is really good for grinding out exp and farming. It gives the highest damage of the three builds if you are constantly hitting (which is more difficult in battlegrounds) but As a fury warrior you give up alot of your hp for Damage almost always forcing you to be in Beserker stance. Arms is a great PvP build because it's short high damage with slow two handed weapons. Sadly there is no set armor for a fury or MS spec warrior but that is why a Defense spec warrior benifits best from the endgame armor and though they don't hit hard they can stun about every few seconds and hit really hard with a one hand. It's not too good for battlegrounds unless your assisting a paladin or shaman partner. A defense warrior is supporting with stuns and the occasional high hit damage. MS warrior's will wreck damn near anything in pvp. and same with a fury warrior as long as the target is in constant melee range throughout the fight.
That prettymuch sums it up if you need any other questions just send me a tell I have a 60 warrior and alot of other classes all with full MC gear and one with BWL gear and a little of her AQ set finished.

I would suggest and Arms/Fury and carrying two different weapon setups. I genereally have 2 One handed swords but for instances where im tanking I but on the shield. Tho if you aren't primary tank keep the swords and use sunder armor to keep the aggro

I don't know too well, but I would use fury to level up and switch to arms for pvp or switch to defensive for tanking.

I ran Arms/Fury Combo to 60 and once I got into raiding switched to Defense. No one wants to heal a Tanking Fury warrior in a raid.
If you just plan on PVP tho Fury is definately the best idea
